At Bare Biology, we love blueberries. They’re a great source of antioxidants and have been shown to improve learning and protect the brain from oxidative stress. They also contain the lowest fructose (sugar), making them one of the healthiest fruits for your breakfast. Our lovely friend Jo from Paleo Crust has given us this super easy recipe for a blueberryliscious smoothie bowl, packed full of healthy berries and topped with crunchy seeds and coconut. A great way to start your day!
Ingredients
Makes 1 large smoothie bowl
Base mix
- 2 frozen bananas (200g)
- 100g of blueberries
- 40g of blackberries
- 120 ml of almond milk
Topping
- 2 tablespoons of pumpkin seeds
- 1 tablespoon of sunflower seeds
- 1 tablespoon of coconut chips
- 1 tablespoon of sesame and flax seeds
- Small handful of blueberries and blackberries
Method
Simply place all the base ingredients in a high-speed blender like a Vitamix or Nutribullet. You may need to scrape the sides a few times with a spatula and repeat blending until smooth. Depending on how thick and cold you like it, you can add more almond milk or rest on the side to warm up. We love it cold though!
Top with the seeds, coconut chips and fresh berries. For extra crunch, you could also toast the seeds in the oven (190C fan assisted) for 5 - 7 minutes until golden. Allow to cool before adding to the smoothie bowl, and enjoy.
